No-sugar banana bread

When your children need a sweet tasting treat, this moist and delicious healthy bake should do the trick. Add a handful of chopped pecans for a bit of crunch.

Serves: 10
Preparation: 10 minutes
Cooking: 40 minutes

Ingredients

● 125g wholemeal self-raising flour
● ½ tsp baking powder
● 2 tsp ground cinnamon

● 75g raisins or sultanas
● 50g butter (or dairy-free equivalent), melted
● 2 tsp vanilla essence
● 1 egg
● 1 tbsp milk (or dairy-free equivalent)
● 3 medium ripe bananas, mashed

Method

● Preheat the oven to 180°C and grease a 1lb loaf tin.

● Mix together the flour, baking powder, cinnamon and sultanas in a large bowl.

● In a separate bowl, mash the bananas, then add the melted butter, egg, vanilla and milk. Mix well.

● Combine the wet and dry mixtures and stir well.

● Pour into the tin.

● Cook for about 40 minutes, until a toothpick comes out clean.

● Cool in the tin for about 10 minutes before turning out.
