Nicer Rice Pudding

Any child can make this — the tricky part is putting it in and taking it out of the oven.
If you have a vanilla pod, cut it in half, scrape out the seeds and add it to the milk at the beginning. This gives it an extra nice flavour. If you like your pudding very smooth, you can add some cream at the end. Eat it either warm or cold.

Serves about 4 people.
You need a shallow
30cm long pudding dish.

Ingredients
130g pudding rice — which is rounder than long grain rice
55g sugar
1.1 litres milk
Vanilla pod and cream (optional)

Method

Turn the oven to 150°C.

Rub a little butter round the dish. Put in the rice, add the sugar and pour over the milk.

Mix it all together, cover the dish with foil and put it in the oven for about an hour and a half.

Take it out carefully. The rice should be creamy and soft. If you cook it 30 minutes more the milk will disappear.
