When your children need a sweet tasting treat, this moist and delicious healthy bake should do the trick. Add a handful of chopped pecans for a bit of crunch.
Method
- Preheat the oven to 180°C and grease a 1lb loaf tin.
- Mix together the flour, baking powder, cinnamon and sultanas in a large bowl.
- In a separate bowl, mash the bananas, then add the melted butter, egg, vanilla and milk. Mix well.
- Combine the wet and dry mixtures and stir well.
- Pour into the tin.
- Cook for about 40 minutes, until a toothpick comes out clean.
- Cool in the tin for about 10 minutes before turning out.
