You will go nuts for these hazelnut cookies. Not only do they have a hazelnut in every bite, but they are made from only four ingredients. 

Pair these walnut macaroons with tart, blood orange granita  (from Ilana Epstein) for the perfect (and super light) Pesach parev pud. If you can't find blood/blush oranges then regular ones will do well. Or try pink grapefruit - just add a little more sugar, to taste. 

Pep up Passover with my peppermint chocolate almond macaroon kisses. Sandwiched together with dark, melted chocolate, they make a perfect partner for coffee or an end of a meal sweet treat.  

If you're looking for a bit of comfort in your cookie, Lisa Roukin's almond butter choc chip cookies are the real deal. Tuck in when you need a culinary hug. 

And if you're looking for a Middle Eastern vibe from your Pesach snack, try Linda Dangoor's Hadji Bada, which pair ground almonds and walnuts plus a pinch of cardamom to take you straight to the shuk. If you moisten your hands with rosewater when rolling them your Persian experience will be complete.
