Cool it with summer soup

It's perfect weather for these soup-er chill starters

Hooray for this sunny weather. The Mediterranean temperatures and balmy breezes conjure up the long-forgotten, lazy meals on sun-soaked beaches. (Sigh)

With no beach (or pool) for most of us, we'll need other ways to keep cool. These chilled soups from the JC's recipe archives are ideal for a sweaty Shabbat: 

Silvia Nacamulli's bread free gazpacho (pictured above) is the very essence of summer. Great for the gluten free and packed with veggies, enjoy it straight from the fridge to cool you down. We love the tiny shot glasses, For a fun way to serve it. 

An old favourite from another favourite, Evelyn Rose, this beautiful borscht is best served over ice. 

Or if you're feeling fruity, this refreshing fruit soup from Judi Rose makes a light finish to a summer Shabbat meal.
