The Talmud says we are meant to savour the idea of eating pig, if not actually to do so.

But here’s a way to get round the restriction — the shibuta, or pigfish.

Rabbi Natan Levy brought back a “fish lost to our tradition” when he cooked one at Sunday’s Gefiltefest in London.

The kosher fish, which can be bought at a fishmonger in Euston, has a walnut-sized brain which tastes very much like ham.
