World Chocolate Day: a cool way to join in

Too hot to bake, but I couldn't miss the chance to celebrate, so i've created the ultimate fridge cake

Today is dedicated all about celebrating this sweet treat must not go by unmarked.

Of course you can just consume truck loads of the stuff, but it's nice to create something, so I dreamed up my ultimate fridge cake. Ticks all the boxes — yummy, chocolatey, colourful — without getting overheated.

Aka biscuit cake or rocky road, it’s one of my favourite treats. Biscuit, dried fruits, nuts and pretty well anything that adds colour or crunch are bound together with lashings of chocolate.

There is actually a Jewish tradition of chocolate biscuit cakes with recipes from Diaspora as far afield as South America, Italy and South Africa for a salami-shaped chocolate biscuit log.

I’ve gone with a round cake in white chocolate for a different colour canvas, with a photogenic scattering of (somewhat clichéd but nonetheless attractive) pistachios, paired with freeze-dried raspberries. It’s smart enough for a party but oh so simple. 

I took some to a barbecue last week and it went down a storm. I left out the nuts to make it child-friendly — corn flakes or rice krispies make good alternatives — and it no one could leave it alone. Just make sure you beat your little ones to it. Find the recipe here
