I was asked to come up with a summery pud for our friends at Sainsbury's. It was to be the star of its own recipe video.
Summer says ice cream to me. It also says berries. One dessert that perfectly combines cream and summer berries is Eton Mess. Sweet crunchy meringue and luscious cream topped with juicy berries are always a winning combination.
So this is a spin on that. The base consists of whisked up double cream and condensed milk. Light condensed milk works fine and makes me feel marginally better. The beauty of this combination is that it freezes to creamy smoothness with out the need to churn. Crushed up meringues coated in melted white chocolate add crunch — and more sweetness — and the berries cut through the cream and sugar.
Layer it up in a loaf tin as shown and serve in slices drizzled with rasbperry coulis or melted white chocolate and some fresh berries, or simply freeze in a plastic container and scoop it out. It'll taste delicious either way. (It even tastes amazing before you freeze it.)
