A bit of crumpet - and they're kosher

Now Warburtons' crumpets are hechshered, they've become my breakfast of choice.

Bread makers are on a bit or a roll where kosher is concerned.

First Hovis and now Warburtons have announced their KLBD certification. 

To celebrate, I've been roadtesting a few crumpet-based breakfast ideas. Each is based on a single giant, toasted crumpet. I've always been a bit fan of the bready treat. My grandma used to serve them up for tea and we'd get to pick what to slather on top of the obligatory melted butter. Golden syrup was a favourite. Golden syrup!!! As if I allow my children to have that on theirs nowadays! I can still recall biting into the crunchy exterior that gave way to that pillowy, chewy centre and left pools of melted butter on the plate to mop up with the last piece. 

I've been trying various (far more healthy) breakfast options. 

First up - eggs scrambled with cottage cheese (to increase the protein) cherry tomatoes and basil. A double espresso on the side.  

Next up was a pretty pink number. Quark - low fat cheese - in which I mashed a few raspberries and added the tiniest smidge of honey to pep up the raspberry flavour. A few fresh raspberries topped it off plus a girlie cuppa in bone china.  

Last up the very 'now' avocado smash. Ripe avo, mashed with lemon juice, chopped cherry tomatoes and coriander plus a good amount of seasoning. Perfect with a milky coffee from my Nespresso machine. My personal favourite.
