No need to miss out on sweet treats over Pesach. Perfect with parev ice cream.
Preheat the oven to 180°C.
Spray a non-stick loaf tin approximately 25cm x 13cm with non-stick cooking spray, and line the bottom with baking parchment.
Mash the bananas, add the vinegar, sugar and vanilla extract and whisk using a stand mixer with the paddle attachment or electric beaters.
Add the salt and cinnamon, mix again, then add the matzah meal and baking powder and stir with a spoon or spatula until fully combined.
Finally, gently fold in the chocolate chips, and then pour the batter into the lined loaf tin.
Bake for 45 minutes – it will be done when a skewer or toothpick inserted comes out with no crumbs attached.
Cool on a wire rack.
To serve, decorate the cake with sliced banana, chocolate and chocolate sauce.
