Courgette sauce for noodles

A gorgeously green sauce that can be ready in minutes - pair with gluten free noodles for a simple supper

This sauce is substantial enough to cook noodles in, which absorb the herb, garlic and citrus flavours beautifully. Use gluten-free noodles to ensure the recipe is suitable for all the conditions listed.

Recipe suitable for: 

  • To reduce inflammation in Crohn’s disease (prefereably reduce oil quantities) 
  • To maintain remission in Crohn’s disease
  • To reduce symptoms of Crohn’s disease and ulcerative colitis
  • For intestinal narrowing
  • For coeliac and gluten intolerance
  • For irritable bowel syndrome – a low FODMAP diet
  • For lactose intolerance
  • Preferably reduce the oil quantities
     
  • Heat the oil in a pan, then fry the courgettes with the thyme. 
  • Add the lemon and orange juice along with the garlic and fry for 2 minutes, before adding the stock, sesame oil, honey and chopped basil leaves. 
  • Serve with noodles for a tasty light meal.
Ingredients

1 tbsp olive oil

3 courgettes, diced or sliced

1 sprig of thyme, leaves only

½ lemon, juiced

2 tbsp orange juice

3 cloves of garlic, chopped

60ml chicken stock

2 tbsp sesame oil

1 tbsp natural honey

2 tbsp basil leaves, finely chopped
