Air-fried apple pie spring rolls with salted caramel sauce

A delicious Chanukah mash up of two favourites that everyone is going to adore

A new take on an old favourite, air fried to crispy perfection. Prepare and freeze in advance for a fuss free Chanukah get-together. Serve with a sweet/salty caramel dipping sauce or luxurious orange flavoured custard. Change them up by swapping out the apple filling for fruity mincemeat plus a good grating of orange zest for a festive treat. If you don’t have an air fryer you can bake them in a conventional oven for about 12-15 minutes on a lined baking sheet.



Method:

  • To make the salted caramel sauce: heat the sugar, golden syrup and butter together in a medium sized saucepan over a gentle heat until melted, stirring with a wooden spoon. When the mixture is bubbling pour in the cream and allow to cook for two minutes or so. Stir in the ½ teaspoon of salt and remove from the heat.


  • Decant into a serving bowl and scatter with a pinch of flaky sea salt.
  • If making the orange custard dipping sauce simply add the orange zest to a pot of ready made custard. Add ½, stir, taste and add more as required, saving some to place top if you want.
  • Next make the apple pie filling: Peel, core and dice the apple very finely into ½ cm pieces. Place the apples and raisins in a pan with 50g butter or margarine, the lemon zest, vanilla bean paste, water, cinnamon to taste, and the sugar - adjust the quantity of sugar according to how sweet the apples are.
  • Cook over a low heat until the apples are cooked through but still hold their shape. Allow the mixture to cool.
  • Dampen a couple of paper towels. Unwrap the filo dough and cover with the damp paper towels as you work on each sheet.
  • Lay a sheet of pastry on your board – long side facing you. Cut the pastry in half down the middle and brush both pieces with melted butter or margarine.
  • Place a tablespoon of the apple mixture 3-cm from the bottom of the sheet of pastry in a rough oblong.
  • Fold the bottom of the pastry up, then fold in the two sides and continue rolling until you have a spring roll shaped parcel. Brush both sides with butter or margarine and place in the lined basket of your air fryer.
  • Continue with the rest of the pastry until you have 16 spring rolls.

Air fry at 190°c for 4-6 minutes, flip them over and air fry for a further 4-6 minutes until crisp and golden brown.

140g soft light brown sugar
30g golden syrup
50g butter
300ml double cream
½ tsp salt
Flaky sea salt
For the spring rolls:
8 sheets filo pastry
75g melted butter or margarine
4 large eating apples
75g raisins, optional

50-75g soft light brown sugar
45ml water
Zest of ½ a lemon
1 tsp vanilla bean paste
