I’m all for a simple schmear of butter or — better still — Nutella. If that’s not for you, I’m willing to bet my last cinnamon ball that anyone not on Team Matzah will be converted by these tasty treats. Just call it your flexible friend.
First up is my matzah granola (aka no-grainola) is so more-ish you’ll be dipping into it long after breakfast time.
Talking of which, Amir Batito’s raspberry matzah brei is the perfect basis for a luxurious, lazy brunch. Serve alongside thick, Greek yoghurt, fruit compote and more of that granola.

This clever spin on matzah from Chanie Apfelbaum is a novel riff on an Italian classic. Passover Panzanella salad crowned with nothing less than matzah brei croutons is genius. Is there nothing this unleavened loaf cannot do?
Denise Phillips takes a sweet swerve, flavouring up the bland cracker with cinnamon and honey to make more-ish crunchy croutons with her crunchy cinnamon matzah, spinach and almond salad. It’s also packed with juicy apples, sticky dates and showered in pretty pink pomegranate seeds.
Take the bread of affliction up a notch with this sophisticated-looking, Sephardi mina de espinaca. A mina de matzah is a layered pie made with a matzah crust and an egg-based filling. This version is made with spinach, cheese, cream cheese, eggs and mashed potatoes. A delicious and special supper or lunch recipe.
And saving the best until last, Trevennon Dakota’s Tira-matzu — a clever spin on the Italian classic dessert — is bound to convert any matzah-hater. The creamy pudding is full of dark chocolate and roasted hazelnut flavour, making it the ultimate indulgence.
With delicious options like these you just might want to keep eating it all year round.
