Eight exciting spring recipes with asparagus

Fabienne Viner-Luzzato pairs her spears with goat’s cheese for these pancakes that a perfect brunch dish that would also be welcome as a light lunch  

Bring an Italian theme to the gorgeous green spears with this feta and lemon-filled spelt-otto from Silvia Nacamulli. It’s the ultimate comfort food for days when Spring is hiding. 

Or add a pop of colour with this Insta-ready salad that combines pretty pink radicchio and chicory with the verdant vegetable. It’s the work of minutes when you make use of pre-cooked pouches of quinoa. 

Denise Phillips puts a green spin on Israeli favourite shakshuka by adding leeks and asparagus spears.  

Eggs and asparagus are a classic combination and here taken up a notch by Carla Lalli Music who has paired hers with a piquant, pickle-filled dressing that will make your mouth sing!

Jeanine Denofrio has created another risotto-likey that is the perfect base for the mild-flavoured spears. Her creamy orzo with asparagus and peas is very undemanding of your time and packed with flavour. Another super comforting creation. 

For a more Middle Eastern-inspired dish turn to Nicola Graime’s simple chargrilled spears with tahini dressing – perfect as a light lunch or sharing starter. 

Denise Phillips’s seasonal salad combines al dente asparagus spears with crunchy, crushed (and crisped) new potatoes. With added grains, a host of veg and ricotta-based dressing, it’s a meal in itself.
