Saffron pearl couscous

Super easy to make and perfect with meaty or fish mains

A deliciously simple side that goes with most mains. It’s perfect with my braised lamb shoulder with date and red wine jus. Top with crumbled feta cheese for a lovely vegetarian main course.

Ingredients

15ml olive oil

1 large onion diced
1 red (bell) pepper diced
1 clove of garlic crushed
½ tsp saffron threads
275g pearl couscous
500ml chicken or veg stock
30ml olive oil
Juice of half a lemon
Salt and pepper to taste
Pomegranate seeds
Curly leaf parsley
