Rosh Hashanah spiced apple and caramelised granola cake with salted honey buttercream

Salted honey buttercream, tart Bramley apples and crunchy caramelised granola make this bake a winner

If you love the flavours of a traditional Jewish honey cake this is for you. The delicious M&S granola includes salted, caramelised nuts, which pair perfectly with the salted honey buttercream. The M&S Collection organic Zambian honey is lovely and rich in flavour which means you really taste the honey in the cake. 

Method:

  • For the apple purée: place the frozen Bramley apples in a medium pan with a tablespoon of water. Cook over medium heat (covered) for 15–20 minutes stirring occasionally to prevent it sticking and burning, until soft enough to purée. Purée with a stick blender or in the small bowl of a food processor. Set aside.

  • Line a 8.5cm x 17.5cm loaf tin with baking parchment and heat oven to 180C/160C fan.

Ingredients

250g M&S frozen Bramley apple slices
115g M&S Remarksable Value unsalted butter, at room temperature
100g light brown soft sugar
100ml M&S Collection organic Zambian honey
1 M&S large free-range egg, at room temperature, lightly beaten
225g plain flour, sifted
1½ tsp bicarbonate of soda
1 tsp baking powder
1 tsp cinnamon
1 tsp ginger
100g M&S Collection caramelised fruit and nut granola|
For the salted honey buttercream:
125g M&S Remarksable salted butter
200g icing sugar
3 tbsp M&S Collection organic Zambian honey
To decorate:
A handful or two of M&S Collection caramelised fruit and nut granola
