Potato and mushroom bourekas

Perfect to pack up for a meat-free picnic option

Bourekas are little puff pastry parcels that are filled with potatoes, mushrooms, spinach or cheese. They are popular in Sephardic Jewish and Israeli cuisine. This recipe uses a potato and mushroom filling and is decorated with sesame seeds.

You can prepare them in advance and freeze baked or unbaked – just pop into the oven when needed.

Ingredients

For the filling:
450g (approx. 3 potatoes), peeled and roughly chopped
2 tbsp vegetable oil
1 onion, peeled and finely chopped
225g fresh mushrooms, finely chopped
Salt and freshly ground black pepper
900g puff pastry, ready rolled if possible
2 egg yolks, beaten, to glaze
3 tbsp sesame seeds
