Celebrating International Hummus Day

How better to celebrate International Hummus Day than with a trip to Israel?

In a few hours I'll be in Tel Aviv.

Of course I'm not actually hopping onto a plane - if only...  

No, at 7pm, I'll be jumping onto onto the internet and Zooming to Tel Aviv, to watch the wonderful Ariel Rosenthal, make hummus. 

Rosenthal really knows his stuff — he's the chef behind fantastic falafel joint, Hakosem. I wrote about him here.  

It may be controversial, but I think he serves up the best falafel and hummus in the city. 

And guess what? To celebrate the creamy chickpea paste, Ariel will be showing me, and an invited group, how he makes his. I have boiled my chickpeas and remembered to keep the murky cooking water. I'm good to go. I'll share his tips tomorrow. 

In the meantime, here are a few you may fancy whizzing up in celebration of the dip's big day: 

1. The pink one: 

Denise Phillps's recipe for beetroot hummus adds is cute-coloured and adds an extra veggie to your meal. 

2. The restaurant-level one: 

A bit more effort, but as our homes are now doubling up as restaurants, you might fancy trying this  gourmet hummus from Josh Katz, as served at his East London restaurant, Berber and Q.

3. The zero-waste one: 

Our favourite eco-warrior, Hugh Fearnley-Whittingstall, came up with this great way of using up leftover roast veggies - turn them into root veg hummus! Perfect when we're all trying to shop less. 

And a super tasty way to eat that hummus from JC contributor, Lisa Roukin:

Lisa Roukin's Little Gem parcels stuffed with Moroccan-spiced beef and hummus   makes a lush, carb-free supper. Protein-packed and full of flavour.
