Rich, dark (and vegan) chocolate mousse

This is such an easy dessert to make – just four ingredients and no cooking. It’s incredibly rich and creamy. The avocado does not affect the flavour, it just adds to the delicious creaminess (as well as being really good for you).

Method:

  • Position a heatproof bowl over a pan of just-simmering water, making sure the bottom of the bowl doesn’t touch the water.

  • Add the chocolate to the bowl and stir occasionally until melted. Leave it to cool a little.

  • Put the avocado, cream, maple syrup and melted chocolate in a food processor and whiz until smooth and combined.

  • Pour the mousse into ramekin dishes and put in the fridge for a couple of hours or overnight to chill and firm up.

  • To serve, top the mousses with grated chocolate and a squirt of cream, if using.

Variation:
You could add the juice of 1 orange to the chocolate mixture, or a few drops of mint essence if you like mint chocolate!

Ingredients

100g vegan dark/bittersweet chocolate (70% cocoa solids), broken into pieces

1 ripe avocado, halved, stoned and peeled

250ml vegan light cream

1 tbsp maple syrup

For the topping (optional):
A grating of vegan dark/bittersweet chocolate (70% cocoa solids)
