White chocolate, lemon and almond cake

This cake makes a delicious and glamorous milky dessert option.

It’s perfectly lovely served sprinkled with a few flaked almonds before baking. But if you want to elevate it to show-off status it’s worth making with this suprisingly simple white chocolate ganache which can be piped or spread on and finished with almonds and edible flowers.

Ingredients

For the cake:

200g almonds, finely crushed or ground almonds 

150g white chocolate, finely chopped

100g butter, at room temperature


200g caster sugar


4 eggs

1 lemon, zest and juice 
1 tsp vanilla extract

A pinch of salt


For the chocolate ganache and decoration:

120ml double cream

150g white chocolate

40-50 whole almonds (optional)
