Watermelon pizza

A gorgeous fruity finish or teatime treat that everyone will love

Cook: No cooking time

Serves: 4-6

This is a simple, colourful and fun way to serve summer fruits. If you want to keep things parev, use a dairy-free cream or yoghurt. 


Method:

  • Using a sharp knife, slice your watermelon into 4-5cm thick discs.
  • Mix the honey and vanilla extract into your mascarpone or yogurt.
  • Using a spatula, spread an even layer of the mascarpone or yogurt mixture onto each disc, leaving a bit of empty space at the edges (where your “pizza crust” is).
  • Layer your fresh fruit and fresh mint on top as you please. You can add as little or as many toppings as you like!
  • Drizzle with honey or maple syrup for extra sweetness if desired.

250g mascarpone or thick natural kefir yoghurt (or non-dairy alternative)
1 tbsp honey
½ tsp vanilla extract
1 watermelon, sliced into 5cm thick discs, or smaller if serving as individual portions
Toppings: fresh berries, fresh mint
