A classic and simple cake of Greece. This juicy walnut cake is flavored with cinnamon, cloves, and nutmeg and bathed in sweet honey syrup.

Ingredients

For the syrup

360ml (1½ cups) water

300g (1½ cups) sugar

70g (¼ cup) honey

6 whole cloves

2 cinnamon sticks

For the cake

120ml (½ cup plus 1 tbsp) vegetable oil

3 large eggs

100g (½ cup) sugar

1 tsp vanilla extract

¼ tsp kosher salt

120ml (½ cup) whole milk

125g (1 cup plus 1 heaped tbsp tablespoon) plain (all-purpose) flour

1 tsp baking powder

1 tsp bicarbonate (baking) soda

1 heaped tsp ground cinnamon

½ tsp ground cloves

¼ tsp freshly ground nutmeg

150g (1½ cups) raw walnuts
