Make sure your ingredients are at room temperature before making these cupcakes so they mix in evenly. Cold ingredients may make the batter lumpy so you have to overmix and make it tough.

Preparation: 30 minutes
Cooking: 20 minutes

INGREDIENTS
250g self-raising flour, sifted
250g caster sugar
250g unsalted butter, at room temperature
4 large whole eggs, beaten
A pinch of salt
21 cup cones

Decoration
250g unsalted butter
200g cream cheese
500g icing sugar
2 tsp custard powder
Food colourings – orange, red, black or white
Sprinkles
Icing pens
1 tsp vanilla extract
