A stunning vegetarian centrepiece that’s Passover perfect

½ a medium cauliflower
2 sprigs of thyme
2 tbsp olive oil
Puree
3 green courgettes
Handful of parsley leaves and basil leaves (without stalks)
½ green pepper
3 tbsp olive oil
Salt to taste
3- 4 tbsp of room temp water (or vegetable stock)
Block of feta cheese or a dollop of salty soft cheese (optional for dairy meals)
