Recipe: Grilled chicken wings four ways

Chicken wings are perfect for barbecuing and therefore popular the world over.

The following recipes use typical Middle Eastern ingredients. Choose your favourite or favourites. Each recipe will be sufficient to prepare approximately 25 wings.

Serves: 4-6 servings

Ingredients

Chicken wings in za'atar

● 120ml olive oil

● 3 tbsp za'atar

● Salt and freshly ground black pepper

● Chicken wings in sumac

● 120ml olive oil

● 3 tbsp sumac

● Salt and freshly ground black pepper

Chicken wings in baharat

● 2 tbsp ground allspice

● ½ tsp ground nutmeg

● ½ tsp ground cinnamon

● Pinch of ground cloves

● 120ml olive oil

● Salt and freshly ground black pepper

● Barbecue flavour chicken wings

● 120ml sunflower or corn oil

● 2 tbsp paprika

● ½ tsp cayenne pepper

● 1 tsp ground cumin

● 5 cloves garlic, crushed

● Salt and freshly ground black pepper

Method

● Mix all the ingredients and soak the wings in the marinade for at least 4 hours.

● Skewer each of the wings which will make it easier to turn them on the grill.

● Grill over a hot charcoal grill or under the grill in an oven set to 220°C.
