Tu Bishvat mixed fruit and nut butter balls

Super fast to prepare, this rainbow of bite-sized fruit and nut-packed nuggets make a healthy celebration treat. Choose one flavour or make them all — the choice is yours!

Method

  • For each variety of energy ball, use a food processor to blend all the ingredients for that flavour for one to two minutes to form a ‘dough’.
  • Roll the mixture into 2cm-diameter balls (approximately), then roall the pistachio balls in pistachio nuts to coat them and the almond apricot balls in ground almonds. 
  • Lay prepared energy balls on a tray or in a single layer in a box and refrigerate for about an hour to set. 
  • Before serving, roll the pecan and date balls in cocoa powder. 
Ingredients

Honeyed pistachio:



170g pistachio butter



60g oats



2tbs honey or agave nectar



 



Almond and apricot:



170g almond butter



100g dried apricots



50g - 80g oats



 



Pecan and date:



170g pecan butter



120g dates pitted



50g - 80g porridge oats



 



Cashew and goji berry:



170g cashew butter



100g goji berries (plus 50g for decoration)



2tbs agave nectar or honey



50g oats



To decorate: 2 tbsp finely chopped pistachios; 2 tbsp ground almonds; 2 tbsp cocoa powder;
