Chicken isn’t for everyone, so here’s our super easy tasty vegetable tray bake to please every vegetarian (or vegan) attending your FND this week!
Method:
- Cut all your vegetables into bite sized chunks and mix in a baking dish alongside the chickpeas.
- Heartily sprinkle your herbs and spices plus a good measure of salt and pepper.
- Cover with olive oil and roast for 30-45 minutes in the oven at 190C.
- Serve up with couscous, rice or pasta.
You can always change the flavourings or vegetables based on your preferences or what’s available in the shops!
