After I finished university in 2023, my mum and I went on a holiday to Italy where we explored Rome and Venice and my best memory from that trip is when we went to a cooking class one night, we learnt how to make pasta from scratch as well as authentic tiramisu. I’m a big coffee lover, I can’t go a day without it, and tiramisu is a perfect mix between a sweet treat and that well needed caffeine fix. Since I have perfected my own simplified version which I love to make for friends.
Method:
- Prepare the coffee by boiling 300ml of water and mixing it with 2 tbsps of coffee, then place in the fridge to slightly cool.
- In a large bowl mix together the golden caster sugar, double cream and mascarpone until it reaches a thick whipped consistency.
- Dunk the sponge fingers into the coffee, make sure not to leave them submerged for too long as you want them to soak up some coffee but not become soggy
- Place a layer of soaked sponge fingers in a dish, then cover them with a good dollop of the cream mixture.
- Finely grate dark chocolate over the cream layer and repeat again with another layer.
- Cover the dish and place it in the fridge to chill before enjoying.

A bar of dark chocolate
