This is a super easy recipe perfect for a Friday Night Dinner, but any day too! It’s loosely based on one my Savta makes but I come from a very make-it-up-as-you-go family!
- Chop up your potatoes, onions and tomatoes into fairly large chunks or wedges and place in a large roasting tin with your chicken pieces. Place cloves of garlic evenly throughout.
- Throw the spices over the ingredients in the tin. I would suggest keeping it even, but enough that everything looks well flavoured, and go a bit stronger with your paprika.
- Pour warm water into the tray, so it fills up about 1/3 of the tray.
- Add in 2-4 bay leaves depending on the size of your tray.
- Place your tray into a hot oven at about 200 Celsius for around 45 minutes.
- Keep an eye to check nothing burns, or that the water doesn’t evaporate.
