Rainbow Coat Cookies

Cream together the butter and sugar to form a smooth, fluffy mixture.

Sift in the flour a little at a time then knead into a ball of dough.

Divide the dough into several smaller balls (we decided on 7 for the different colours of the rainbow).

Take each ball and make a well in the centre. Add a few drops of your chosen food colouring.

Work the colouring into the dough until the colour is bright and even. You can add a little more flour if the dough becomes too sticky.

Roll out each different coloured ball flat and pile the different coloured doughs on top of each other. Roll the pile into a log shape.

You can then cut slices off the log, each of which will have a rainbow of colours.

Roll out a slice and cut out your shapes.

Bake for 10–15 minutes until firm but not too browned.

Cool on a wire rack.
