Pesach chocolate brownies

Deeply chocolatey and spiked with pistachios, these flourless brownies are a must-bake

Cook: 30 minutes

Serves: 20

These nutty, gluten-free brownies are super-easy to make, and are a brilliant Pesach dessert or delicious afternoon treat.

Method:

  • Heat the oven to 160C fan
  • Melt the chocolate and butter in the microwave or bain-marie.
  • Once melted, add the sugar, eggs, cocoa powder and drinking chocolate, and mix until smooth.
  • Pour into a 22 x 22cm tin lined with baking paper, and cook for exactly 30 minutes.
  • Cool down in the tin. Then refrigerate for one hour, before cutting into pieces.

Ingredients

200g dark chocolate
175g butter
3 eggs
300g sugar (you can replace with sugar substitute if you wish)
65g cocoa powder
65g kosher for Passover drinking chocolate
100g white chocolate chips
100g shelled pistachios, plus 25g for decoration (optional)
30g white chocolate, cut into chunks for decoration (optional)
