Date honey cake

Everyone needs a new honey cake for Rosh Hashanah, especially one that is a bit different.

Serves: 8 - 10

This has a lovely twist, as the ‘honey’ in the ‘land of milk and honey’ described in the Torah is thought to be date syrup and not actually from bees.

Ingredients

175g whole pitted dates, roughly chopped

140g plain or spelt flour

1 tsp baking powder

1 tsp cinnamon

½ tsp salt

Pinch nutmeg

250ml vegetable oil

100g brown sugar

75ml date honey (silan)

3 large eggs

1 tsp vanilla essence

100g chopped walnuts
