Charred nectarine and mascarpone Pavlova

Ingredients

For the meringue:



6 egg whites



375g caster sugar



1 tsp balsamic vinegar



1 tbsp cornflour



For the nectarines:



250ml of Sauternes, or another dessert wine



150ml water



1 strip lemon peel



25g caster sugar



4 ripe nectarines



½ tsp icing sugar



For the mascarpone cream:



200g mascarpone



150ml double cream



2 tbsp icing sugar



Basil leaves, to garnish
