Baked Brussels sprout latkes

Spouts are a love 'em or hate 'em ingredient but a favourite at this time of year and delicious in this healthier baked version of a Chanukah favourite

Ingredients

2 large potatoes, peeled and grated

1 large onion, peeled and finely chopped

200g Brussels sprouts, trimmed, root discarded and finely shredded

1 large egg

2 tbsp rapeseed oil

2 tsp Dijon honey mustard

Herbamare or Maldon sea salt

White pepper

¼ tsp. garlic granules

To serve (optional):

Apple or cranberry sauce

Yogurt or sour cream
