Honey cake recipe
Ingredients
- 1 lb tin golden syrup
- Same quantity of water (use empty tin)
- 8oz caster sugar
- 8 fluid oz vegetable oil
- 3 size 2 eggs
- 1 lb self raising flour
- 1 tsp mixed spice
- 1 tsp ground ginger
- 1 tsp cinnamon
- 1 tsp baking powder
- 5 tablespoons Kiddush wine
- 2 tsp bicarbonate of soda
- Optional toppings: sultanas/ flaked almonds
Method
- Put golden syrup, water, sugar and oil in a saucepan and allow to melt slowly over a very gentle heat (do not allow to boil)
- When the mixture is transparent, remove from heat and cool completely
- In food processor/ mixer, beat eggs, add cooled syrup, flour, spices and baking powder and mix thoroughly
- Put the wine in a jug
- Add bicarbonate of soda and let it fizz
- Add this to the cake mixture and mix in well
- Pour the cake mixture into 3 greased and parchment lined 2lb loaf tins or 1 large square tins
- Cook in pre-heated oven at 160 degrees/ Gas mark 4 for 40 minutes for loaf tins, 1 and a half hours for square tin (cakes are done when a skewer inserted into the centre comes out clean)
