Bayern made their traditional slow start and took 25 minutes to get going. Having said that, it was a relatively even game at that stage and they broke the deadline at around 25 with a well-taken free-kick from Ryan Kramer which found the top left-hand corner.
Ellis, who had "one of the best individual performances" manager Holder "had seen from a player" hit back on the 30-minute mark with a Gareth Bale-esque run down the wing, before he smashed it into the bottom corner.
Akiva Fink made it 2-1 after finishing neatly from a long free-kick into the box from Sam Leader, before Ellis made it 3-1 on the edge of half-time with a similar finish to his first goal.
The Dons looked like they had found a lifeline early in the second half after a flick from Joel Sinclair-Horne found the hand of a Mincha defender in the box allowing Harry Moss to convert from the penalty spot.
However, Ellis' scoring form continued and some great wing play from substitute Nathan Hanan, which saw him beat a few players, played him in to slot home to make it 4-2.
A surging run from Adam Biton, and a cross come shot played in Ellis again to make it 5-2. Finally, a peach of a crossfield ball from Sam Kanter found Ellis free who slotted home for his 5th goal of the match.
Bayern joint-manager Daniel Holder told JC Sport: "Overall, we are very happy with the win and progression in the cup and would love a cup run to follow our promotion ambitions."
Dons boss Brandon Hamme told JC Sport: "It was a disappointing day out today, at times it looked promising but we didn't manage to do enough to warrant a win.
"We looked good value for the lead but the game slowly started to sway towards Bayern Mincha which led to three goals in quick succession before half time.
"Things stayed tight with one goal in with just 15 minutes to go, unfortunately just like the first half we went on to concede three goals in quick succession late in the half.
"Credit to Bayern Mincha, they got a very decent team that made it hard for us. Our heads dropped towards the end and what was looking like a very close game with 15 minutes left to go, became one-sided.
"We have been solid in previous weeks and still have a 100 per cent record in the league, so it's not all doom and gloom. I'm sure we will pick ourselves up and get a positive result next time out."
