Pesach recipe: Vegan banana choc chip loaf

Perfect with a cuppa or as a dairy free dessert

No need to miss out on sweet treats over Pesach. Perfect with parev ice cream.

Method

  • Preheat the oven to 180°C.

  • Spray a non-stick loaf tin approximately 25cm x 13cm with non-stick cooking spray, and line the bottom with baking parchment.

  • Mash the bananas, add the vinegar, sugar and vanilla extract and whisk using a stand mixer with the paddle attachment or electric beaters.

  • Add the salt and cinnamon, mix again, then add the matzah meal and baking powder and stir with a spoon or spatula until fully combined.

  • Finally, gently fold in the chocolate chips, and then pour the batter into the lined loaf tin.

  • Bake for 45 minutes – it will be done when a skewer or toothpick inserted comes out with no crumbs attached.

  • Cool on a wire rack.

  • To serve, decorate the cake with sliced banana, chocolate and chocolate sauce.

118g ripe, medium bananas (approximately 3)

100g caster sugar

170g cappuccino chocolate chips (vegan)

1 tsp vanilla extract

A pinch of salt

½ tsp cinnamon

1 tsp baking powder

60ml apple cider vinegar

To serve:

1 banana, sliced

Ready-made chocolate sauce

Chocolate chips
