Ayse fasulye — Turkish bean salad

This colourful dish works well as a mezze dish.

 

  • In a small frying pan, saute the onions in the olive oil until translucent. Add the diced tomatoes and cook for a further 5 minutes.
  • Add the beans, sugar, salt and 100ml water and simmer, covered for 20-30 minutes.
  • Remove from heat. Transfer to a serving dish to cool.
Great as part of a mezze spread
Ingredients

1 tbsp olive oil

½ a white onion, finely sliced

1 - 2 tomatoes, diced

250g runner or stringless beans, sliced horizontally

½ tsp caster sugar (optional)

salt to taste
