For a tall glass: place the feta in the bottom of the glass, add lots of ice, and pour in the watermelon mix. Add the gin and gently mix using a long spoon. Top up with the fizz of choice, and garnish with mint.
For a coupe or martini glass: place the watermelon mix and gin in a large jam jar (or a cocktail shaker) with ice. Shake vigorously to combine and chill it. Place the feta in the bottom of your glass, and pour the chilled watermelon mixture over it. Top up with your fizz of choice, and garnish with mint.
