Summer berry meringue cake

Poppy (aged 10) devised this cake which won Clore Shalom School’s Summer Fair Bake Off  

Ingredients

For the Sponge:

3 large eggs, beaten

Margarine, caster sugar and self-raising flour, each approx. 175g

Pinch of salt

Vanilla extract, 3 - 4 drops

2 tbsp milk

For the filling:

Strawberry jam

For the icing:

250g butter

500g icing sugar

½ tsp vanilla extract

2-3 tbsp milk

2 large egg whites

55g caster sugar

55g icing sugar
