Nammoura — Levantine milk baklava

Move over nuts - there's a new filling in town

Serves: 4

These tiny parcels, for which recipes date back to the Ottoman Empire, are stuffed with a thick, creamy filling based on milk and enriched with mascarpone cheese. The original recipe uses Turkish cheese — kaymak — which is a little harder to come find.

Ingredients

For the syrup:


340g honey  


180ml water 


1 small star anise


2 cloves


½ cinnamon stick


For the filling:


240ml milk


15g sugar


30g fine semolina 


30g mascarpone


For the dough:


1 package filo pastry


200g melted butter / butter flavoured spray


Garnish:


2 tbsp finely chopped pistachios.
