Matzah nachos (Machos)

Fun, fast and full of flavour, these machos are a Passover hero

Serves: 2-4

Every year I look forward to creating matzah recipes, and this is one of my favourites. These sheet pan machos are super easy to make and you can load them up with all of your favourite toppings

Method:

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Break the matzah sheets into large, chip-like pieces and arrange them evenly on the prepared baking sheet. Sprinkle the shredded cheese over top, layering the matzah and cheese slightly for the best coverage.
  • Bake for 5-8 minutes, until the cheese is fully melted and bubbling.
  • Meanwhile, prepare the guacamole: scoop the avocado flesh into a bowl and mash with a fork to your desired consistency. Stir in the lime juice, garlic powder, salt and pepper, and adjust seasoning as needed.
  • Remove the matzah from the oven and immediately top with spoonfuls of guacamole, diced tomatoes, sour cream, and chopped cilantro.
  • Serve right away while warm.

Ingredients

For the machos:
4-5 sheets matzah
100 g shredded cheese of choice
2 Roma tomatoes (about 200g), diced
120g sour cream
15g fresh coriander, finely chopped
Salt and pepper

For the guacamole:
2 medium ripe avocados
1 lime, juiced
1 tsp (5g) garlic powder
Salt and pepper, to taste

For the garnish:
1 handful of fresh cilantro, chopped
1/4 tsp chili flakes (if you like heat)
Salt and pepper
