Biltong and butternut salad

Ingredients

100-200g biltong shavings

500g butternut squash, peeled, cored, and diced

2 tbsp olive oil

100g mixed baby leaf salad including rocket

1 large avocado, peeled and diced

3 tbsp roasted mixed seeds

Chopped fresh parsley to garnish

Balsamic glaze or any vinaigrette

Extras: lime and pomegranate
