Honey Cake

Baked four honey cakes today for Rosh Hashana. I am aware of the debate going on in the JC over the best honey cake recipe and for years was also an Evelyn Rose Lekach fan, but I have been converted ...to Clarissa Hyman's Lekach recipe, which can be found on page 138 of her wonderful book, The Jewish Kitchen. to her friend, Zena Swerling and this lekach reipe is the best! It's moist and full of flavour and even better , so easy to make. All it requires is an 8 floz glass, a teaspoon, some easy to find ingredients and a food mixer. You can interchange syrup with honey, brown with white sugar, increase or decrease ginger and mixed spice. It never comes out the same but always tastes wonderful. I defy anyone not to like it! I'm making two extras,and taking them to Israel to give to Josh, Bas and Alex. That'll give food for thought to Security!
