Cakis are tiny savoury biscuits - perfect with a Purim drink. You can add all sorts of things to the basic recipe to flavour them such as green olives, anise seeds, sun-dried tomatoes, pickled cucumbers, nuts and anchovies. I have used olives, capers, jalapeno peppers and nuts.

INGREDIENTS
For the basic biscuits:
200ml water
200ml sunflower oil
1 large egg
Salt and pepper
450g self-raising flour, plus 50g for dusting
Flavourings:
150g black olives pitted drained and chopped
50g capers in brine, drained
60g jalapeno peppers, drained
150g mixed salted nuts
METHOD
Heat your oven to 160°C and line a couple of large baking trays with baking parchment.
Mix all the ingredients except the flour together.
Add the flour slowly mixing to form a compact ball. You may not need it all.
Divide the ball into four quarters.
Add the olives to one quarter, capers to the next, peppers to the next and nuts to the last one.
Roll them into long sausages of about 2cm diameter, and cut them into 2cm cubes.
Cook in the oven for 15 - 20 minutes on the prepared baking sheets.
