Sea Bass with balsamic and rosemary

This is quick and easy to make and goes very well with some oven-baked sliced potatoes.
Serves 2

Ingredients:
2 sea bass fillets
50g salted butter or olive oil
1 tsp fresh rosemary, finely chopped
2 tbsp Balsamic vinegar
1 tbsp fish sauce

Method:

Preheat your oven to 180°C.

Melt the butter in a frying pan and coat the fillets. You will need the buttery frying pan in which to make the sauce so put it to one side.

Place the fillets in a baking pan and bake in the oven for about eight minutes.

Add the rosemary, vinegar and fish sauce to the frying pan while the fish is baking. Taste and adjust seasoning as necessary.

Remove the fish from the oven, pour the butter sauce over it and serve.
