This is a great recipe for getting a chocolate fix without reaching for that nasty sugar. Cacao is chocolate in its pure, unrefined state and is packed with antioxidants. The protein in pecans will keep you feeling fuller for longer and coconut is just an all-round miracle worker - coconut has been found to speed up metabolism and boost the immune system, and is great for healthy skin and hair.

Makes: 16 truffles approx
Preparation: 30 minutes

Ingredients

● 50g pecan nuts
● 150g Medjool dates
● 40g desiccated coconut
● 1 tbsp cacao powder
● ½ tbsp coconut oil
● ¼ tsp vanilla
● A pinch of cinnamon

Method

● Put all the pecan nuts in a food processor and blend until crumb-like.

● Add the remaining ingredients and blend until it is all very finely chopped. It will still seem like a powder.

● Tip into a bowl and take large teaspoons of mixture, press it together between your fingers, and roll into balls.

● Leave them to set in fridge for at least 20 minutes. They will keep for a week in the fridge - if you can stop yourself eating them all at once.
