Layered trio of chocolate mousses

There is nothing like chocolate mousse to finish a meal, but this is THE chocolate mousse to serve to impress.

Serves: 10-12
Preparation: 45 minutes + 6 hours refrigeration
Cooking: 5 minutes

Ingredients

Dark chocolate mousse:
● 6 medium eggs or 5 large, separated
● 200g of dark chocolate
● Milk chocolate mousse:
● 6 medium eggs or 5 large, separated
● 200g milk chocolate

White chocolate mousse:
● 200g of white chocolate
● 200 of double cream
● 3 medium eggs, separated
● Extra chocolate to decorate

Method

● For the dark chocolate mousse: beat the egg whites until very firm.

● Melt the dark chocolate and add the yolks. Mix very well.

● Add the chocolate mix to the whites and beat well. Set aside.

● For the milk chocolate mousse: follow the same process as above with the milk chocolate.

● For the white chocolate mousse: whip the double cream until it is fluffy but not too firm.

● Beat the egg whites until very firm and melt the chocolate in a small bowl over a pan of simmering water, or in the microwave for one minute.

● Mix the chocolate with the cream, add the egg yolk then combine with the egg whites.

● In a large, glass serving bowl, layer up the three mousses.

● Refrigerate for at least six hours or overnight if you can.

● Before serving decorate with dark, milk and white chocolate shavings made with a grater or peeler.
