I make a whole batch of this stuff and keep it in an airtight container for 2 weeks if my brother Bobby doesn't get his hands on it.
Ingredients
● 225g gluten free rolled oats
● 150g nuts (pecans/almonds/pistachios/hazelnuts/walnuts/etc)
● 175g sweetener (maple syrup/honey/brown rice syrup)
● 50g oil (corn oil or melted coconut oil)
● Pinch of salt (kosher or regular)
● 1 egg white
● Optional ingredients: 90g unsweetened coconut flakes, 85g dried fruit, 1 tbsp mixed spices, (cinnamon, ginger, nutmeg, etc), 160g dark chocolate chips
Method
● Preheat your oven to 160°C fan.
● Measure oats, nuts, salt, spices, and optional extra ingredients (if using) into a large bowl.
● In a separate small bowl, mix 1 slightly beaten egg white with oil and sweetener.
● Add liquid mixture to dry ingredients, stir well.
● Spread onto a large baking sheet.
● Bake for 30-45 minutes, or until golden brown and fragrant.
● Let cool completely.
● Store in airtight container until eaten.
