Dried fruit bites with ricotta cheese and nuts

This is an easy, seasonal and perfect dish for Tu Bishvat, celebrating with dried fruits and nuts. I like to add ricotta as it softens the intense flavour of the dried fruits and nuts. You can prepare these canapés up to an hour in advance and leave covered at room temperature.

Makes: 30
Preparation: 10 minutes

Ingredients

● 10 Medjool dates
● 10 dried apricots
● 10 dried figs
● 200g ricotta cheese
● 30 walnut or pecan halves or 30 pistachios or pomegranate seeds or a mix of them

Method

● Halve the dried fruits lengthways. If the figs are big, quarter them.
● Place a teaspoon of ricotta cheese inside each fruit and decorate with walnuts, pecans, pistachios or pomegranate seeds.
